It has been known for a long time that the color change is because of the chemical within the shell, referred to as astaxanthin. When it is in its natural state is bright red-orange color. Astaxanthin can be attached to a mixture of shell proteins referred to as crustacyanin. This reaction gives lobsters natural dark blue, brown, or gray hue.
